    Almond-date-coconut cookies

    Ingredients:

    1 Cup almonds, soaked in water for 8 hours and dried in dehydrator or in the sun
    1/4 tsp. Atlantic sea salt
    1 vanilla stick
    1 cup dates, stones removed
    5 Tbs. dried coconut flakes

    Preparation:

    Scrap out the seeds from vanilla stick and grind in a coffee grinder. Mix together with all the ingredients, except for the coconut. Divide the coconut in two: two tablespoons for the mixture and three tablespoons for coating of balls.
    Form into small balls and roll them in the remainder of the coconut.
